A couple of years ago, we discovered a small patch of morel mushrooms in an area close to the dining room. Our chefs picked them when they were ripe (just turning colour) and then, with their shoes, shuffled over the area to spread the spores. What a funny sight, three chefs kicking up dust! Last year we harvested 15 mushrooms and followed the same procedure. This year, as soon as the rain came, out they popped and we counted 22!
